  3. To get rid of the bitter taste of blackberries, a large amount of sugar is put in the jam. The ratio of 1.5: 1 is the minimum.
  4. To preserve the taste of the fruits for the whole winter, they are corked in jars.
  5. To improve the taste of black berry jam, apples or other fruits are added to it.

Classic chokeberry jam for the winter

For the preparation of blackberry jam, according to the recipe, the simplest products are taken in small quantities. They are combined and boiled.

Ingredients:

  • blackberry - 1 kg;
  • sugar - 1.5 kg;
  • water - 2 glasses.

Chokeberries are sorted out before cooking, washed under running water, and allowed to drain.

Next, berry jam is prepared as follows:

  1. Place the berries in a food processor bowl and grind until smooth. You can grind the fruit by hand through a sieve.
  2. Water is added to the black-fruited berry mass, the mixture is poured into a saucepan and placed on the stove.

  4. Sugar is added to the boiled berry, mixed. The sweet mixture is boiled over high heat for 5-7 minutes. Then set aside, let it brew for about half an hour and boil for another 5 minutes over low heat.

Important! During the whole process of making the jam, it is stirred with a wooden spatula. This will help to avoid sugar settling and burning.

Antonovka jam with chokeberry

Such a delicacy turns out to be thick and tasty. Apples will not allow mountain ash bitterness to appear, but there will be a slight astringency in the taste.

To prepare jam from apples and black mountain ash, take the ingredients:

  • apples (Antonovka) - 2 kg;
  • blackberry - 0.5-0.7 kg;
  • granulated sugar - 1 kg.

To save the preparation for the winter, banks are prepared. They are well washed and sterilized over steam, just like lids. Then they start making jam.

Antonovka is washed, the stalks are removed and cut into several large pieces. You do not need to remove the peel and seeds. They contain pectin, which will make the jam jelly-like and smooth. This substance is also found in mountain ash, so the jam from it has a thick consistency.

Aronia berries are also cleaned of debris, sorted out and washed under running water.

Next, the jam is prepared as follows:

  1. Pour 1000 ml of water into a deep saucepan with a thick bottom. Apples and black fruit are added to the liquid.
  2. The fruit mixture is boiled for 15 minutes until the apples are soft.
  3. After the mixture is allowed to cool slightly and rub it through a sieve to get a pure puree without cake. An equal portion of sugar is introduced into it.
  4. A glass of water is poured into a saucepan with a thick bottom, boiled, and the berry mass is spread on top. The fire is screwed on and the sweet mixture is boiled for no more than half an hour, stirring.

Important! The readiness of the chokeberry apple jam is determined by its density. Do not cook jam for more than 30 minutes.

As soon as the confiture becomes dense enough, it is distributed among the jars and put away for storage: rolled up lids - in the pantry, nylon - in the refrigerator.

Black rowan jam: filling for pies

For this recipe, take black chokeberry and sugar in a 1: 1 ratio. The fruits are washed under running water, discarded in a colander and allowed to drain.

Important! The minimum amount of liquid in the fruits of the chokeberry should remain.

Only then will the jam be thick enough to be used as a filling for baking.

Preparation:

  1. Sugar and blackberry are combined in a 1: 1 ratio. The pan is set aside for several hours - the berries should let the juice go.
  2. After 5 hours of simmering, the sweet berry mixture is placed on the stove and simmered after boiling for 60 minutes. In this case, the jam is constantly stirred to prevent sticking.
  3. As soon as the jam thickens, it is removed from the stove and cooled. After the berries are ground with a blender.
  4. Put black chokeberry puree back into the pan and simmer over low heat until the juice is completely evaporated, about 15-20 minutes.

Ready jam is corked in sterilized jars or sent to the refrigerator for storage. The twists cool down in the kitchen at room temperature, after which they can be transferred to the pantry or cellar.

Storage rules for chokeberry jam

Sweet desserts with a high sugar content have good shelf life and long shelf life. Blackberry jam for the winter, rolled up in jars and sterilized, can be put in the pantry and stored there from a year to 2. It is important that the temperature in places where jams are stored does not rise above + 12 ° C.

If the blackberry jam is distributed in jars, but not sterilized, then such a product can be stored in the refrigerator for up to 6 months.
